That's exactly why that action takes only one button press. Either on screen, or through a remote controller on your handlebar.

Yes. Auto skip is for shaping points you missed. VIA will also be skipped, but only if you hit them. Hence the "obligatory" VIA point.
When a track has been created and is being used, shaping points have no role to play anymore in my opinion.
This is where we disagree. If VIA points are there, they should NOT be auto skipped (when missed!). It is still a VIA point. If you don't want them to be obligatory, change them back to a shaping point.

I hate to say it but if the app cannot be changed such that via points become skippable, then could we make make everybody happy with yet another setting?

I don't see how that would help your case. VIA points would still not be auto skipped.
Sticking to the rule that via-points are never to be skipped limits the apps functionality in such a way that I cannot use it.
I don't mean no respect, but I seriously think you should change your methodology. If you want POI of interesting places without adding VIA points, you should simply add them as shaping point plus a POI and not as VIA points. If you only show VIA points while navigating, the POI at that shaping point will still be visible.
