In fhe last 25 years, I went almost every yearto the Dolomites and almost every year another route. So there is not one special route. You only have a few transitionpoints from Southern Germany (or maybe Switserland), to the Dolomites. Start with choosing your transitionpass (Münstertal-Stilfersjoch, Reschenpass, Timmelsjoch, Fernpass, I think that was it) and from that point make your route.
Perhaps Luxemburg, Vosges, Schwarzwald, Alps, Reschenpass is a nice one.

Avoid riding to fast, it is expensive
