Simply longpress the waypoint from were you want to restart your route and all of the waypoints before that point will be skipped!
I've read this a few times already and have just tried it, works great. A tip: long press it just before starting the navigation (on the page when you can exclude highways, tollroads, ect.). I first tried it on the detail page of a route, the app then starts navigating to that point.

As far as my knowlege goes (correct me if I'm wrong), the difference is that a route is build-up of route points. Your navigation will make a route between these points itself. So the navigation could create a route that's different than when viewing it on your PC (mostly happens when not enough route points are used). On the other hand, a track is a set of points which create a (fixed) line(road) which the navigation will interpert. This line locks down how the navigation will navigate from the start to the end of the route. This is because the line will define what roads the route(litteral route, not GPX route) will take.
